Pumpkin Dip with Ginger Crackers
This has become one of my all time holiday favorites. It’s so simple to make it is almost silly, but EVERYONE loves it. I mean loves it to the point of licking the bowl, loves it. I serve it at get togethers from October through December and have even used it for holiday parties at my kids schools. I’m warning you now though, this stuff is seriously addictive. I’ve been known to just walk by the fridge and suddenly find myself pulling it out and taking a scoopful with my finger.
What you will need:
8 oz of cream cheese (softened)
1 container of cool whip (8 oz) (thawed, NOT frozen)
1/2 Tbsp Vanilla
1 jar of pumpkin butter (12 oz)
Ginger snap cookies

I like to get the pumpkin butter and ginger snaps at one of my favorite stores on earth – World Market. I buy the Oregon Growers and Shippers Pumpkin Butter (In-Stores Only) and the Nyaekrs Gingersnaps that come in this decorated tin that can double as pretty holiday decor.
Okay, I told you this was easy. All you do is put all the ingredients (cream cheese, pumpkin butter, vanilla and cool whip) into a bowl and mix on medium speed until blended together and fluffy. It usually takes about three or four minutes tops. As a little hint, I often will cut up the cream cheese just to make things easier, but I really don’t think you have to.
You can pretty much serve the dip as soon as it is finished or put it in a sealed container and store in the fridge for up to a week.
Easy Pumpkin Dip with Ginger Crackers
Ingredients
- 1 Jar of Pumpkin Butter 8 oz
- 8 oz of Cream Cheese softened
- 1 Container of Cool Whip Thawed NOT Froze
- 1/2 Tbsp Vanilla
- Ginger Snap Cookies for Serving
Instructions
- Place all the ingredients in a bowl. Sometimes it makes it easier to cut the cream cheese into chunks.
- Blend with an electric mixer on medium speed until combined and fluffy (3-4 minutes)
- Serve immediately with Ginger Snap Crackers or place in a sealed container in the fridge for up to seven days
