Baked Eggnog Donuts with an Eggnog Glaze
I have a small obsession with Eggnog, but I only allow myself to indulge during the holidays each year. I think overall there is just something about the rich creamy texture as well as the spice mixture. I associate that fragrant combination of cinnamon, nutmeg and vanilla with the comfort and joy that comes with this season of family and togetherness. Since making donuts is an easy baking activity for my children to help me prepare, we decided to add a bit of Christmas magic to our favorite recipe by adding in some eggnog to the usual mix. The fact that frosting and sprinkles were involved also inspired some extra enthusiasm from my kiddos.
Alright, so here is what you’ll need:
1 cup all-purpose flour (I used wheat flour to make them a touch healthier, but either kind works)
1/4 cup sugar
3/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon fresh grated nutmeg
1/4 teaspoon salt
1/2 cup eggnog
1 egg
2 tablespoons coconut oil melted (vegetable oil is fine as well)
1 teaspoon vanilla
For the Glaze
1-1/4 cups powdered sugar
3 -4 Tbsp Eggnog(give or take)
1/2 tsp vanilla
**Red and Green Sprinkles or a touch of grated nutmeg
When it comes to baking, I try when possible to make sure I use fresh spices and REAL vanilla extract (not imitation), but you can easily do with what you have available. Also, for the eggnog, I’m kind of a snob. I really do prefer the Southern Comfort Vanilla Spice (no, I don’t get paid to say that). Overall, it just already has the spice mixture as part of its ingredients and provides a stronger flavor. However, if you use another type of eggnog, you may just want to add a bit more vanilla, cinnamon and nutmeg to really get that traditional taste when using in baked goods.
Okay, on with the donuts. Preheat your oven to 425 degrees F and lightly grease a donut pan (I used a touch of butter). In a bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg and salt. In another bowl, whisk together the 1/2 cup eggnog, egg, coconut oil and vanilla. Mix the wet ingredients into the dry ingredients just until combined. Don’t over mix or you’ll get chewy donuts. Spoon the batter into the donut pan, filling each round about 3/4 full.
Bake the donuts for 7 minutes and then place them on a cooling rack or even just a paper towel and give them a little time to cool down before you put on the glaze. To make the glaze, whisk the vanilla and then the eggnog one Tablespoon at a time into the powdered sugar. You want it to have a fairly thin consistency, but enough substance that it’s not all going to run off the donut. Once the donuts have cooled, you can used a spoon to drizzle the glaze over the donuts or a spatula to lightly spread it across the top of each donut. Sprinkle with holiday colored sprinkles to make them a bit more festive or you can simply grate a small amount of extra nutmeg over them.
