I love how certain foods are associated with seasons and now that Summer is almost upon us, the backyard BBQ returns! Grilling season is our family’s favorite and we love gathering friends for impromptu cook-outs with simple recipes.
After the grill cools down, it’s time to bring out the grand finale of the evening, DESSERT! No matter how delicious a meal is, inside I’m still a 6 year old wanting dessert! One of my favorites is Easy Berry Crisp because I can create it in 10 minutes, pop it in the oven, and it’s the perfect way to end an evening.
We are berry fanatics over here so I usually have a good selection on hand and you can use whatever is available. I add sugar and vanilla to the berries because, as I’ve mentioned before, sweets are basically a food group over here and it helps if your berries aren’t quite at their peak. Toss the fruit with the flavor enhancers and spread in a pie plate or medium sized baking dish. Even if you only have one type of berry, this will still be a delicious ending to your meal!
Combine the dry ingredients and then add the yumminess known as butter, a whole stick, please! Our feelings about butter are rivaled only by sugar over here.
I may or may not have started eating these before adding the topping…and let’s not talk about me eating a spoonful of topping, perfectly acceptable to eat this dessert uncooked.
There is only one magic step left to create this divine experience, one final step to greatness, and that is the addition of sweet, creamy, and delicious Blue Bunny Ice Cream that I’m sure to toss in the cart on my WalMart trip. Warm, juicy berries, crisp, crunchy crumble topping, cold, creamy vanilla ice cream, there’s no other combination like it. All the flavors of Summer in each delectable forkful. Be sure to fill your plate up, there won’t be any leftovers.
Easy Berry Crisp
Ingredients
- 6-7 cups of your choice in berries
- 1/4 c granulated sugar
- 1 tsp. vanilla
- 3/4 c firmly packed brown sugar
- 1/2 c all purpose flour
- 1 tsp cinnamon
- 3/4 c rolled oats
- 1 stick 1/2c butter, cut into pieces, at room temp.
Instructions
- Combine berries, white sugar and vanilla, spread in the bottom of a 9" pie plate of 9x9 baking dish.
- For Topping:
- Mix brown sugar, flour, cinnamon and oats together.
- Using a fork(or pastry blender) cut butter into dry mixtures until well combined.
- Sprinkle evenly over the berries, Bake at 375 until golden and berries are bubbling.
- Serve warm with vanilla ice cream on top.
