Easy Greek Flatbread Recipe
Dinnertime can be stressful for anyone, but especially busy families. You want something fast, easy and preferably at least somewhat healthy. Plus, you want a meal that everyone will actually eat. This Easy Greek Flatbread recipe has become a favorite in my family. We all like it because it tastes good, but it’s one of my “go to” meals because it is FAST and HEALTHY! Win/Win.
Here’s what you need:
1lb ground chicken
2 cloves garlic – minced
1 1/2 tsp paprika
1 1/2 tsp oregano
1/2 tsp salt and pepper (to taste. I often don’t even include it)
1 cup diced tomatoes (I like cherry or grape, but really whatever is great!)
1 cucumber diced
1/2 cup feta cheese
3/4 cup Greek yogurt
4-6 Flatbreads
Heat a large skillet over medium to medium high heat, use a little olive oil to coat (or cooking spray). Add the ground chicken, garlic, oregano, paprika, salt and pepper. Cook until the ground chicken is no longer pink and has broken into small chunks (5-7 minutes).
Warm the flatbreads in the microwave for 15 seconds and then place one on each serving plate. Place about 1/4 cup of the chicken on each flatbread. Top with tomatoes, cucumber, feta and a dollop of the Greek yogurt. I usually eat mine with a fork, but my kiddos like to roll it up into a little burrito. Whatever works as long as they’re eating it!
